It started on Maui.
Chef Michael Campbell went to Kapalua Bay to open a hotel. He stayed for the education.
Opening Montage Kapalua Bay meant more than building a kitchen. It meant learning the islands on their own terms: the fishermen, the farmers, the families, the rhythm of how people actually eat when they're home. Campbell immersed himself in it.
The culture, the technique, the respect for what the ocean gives and what it doesn't. Years later, that's still the standard he cooks to.
The Shore is what happens when that education comes home to South Orange County.
Everyday food, done with care.
Campbell's path runs through top kitchens from Barcelona to San Francisco, and today he leads Pacific Pearl Café and White Rooster alongside The Shore. But the goal here isn't fine dining. It's the opposite.
"Early in my career, it was about chasing accolades," Campbell says. "Now it's about approachability. Making memories. Creating a place people want to come back to again and again. The Shore is everyday food, done with care, depth and chef-driven flavor."
Hawaiian-inspired bowls built on clean fish and bright acid. Loaded burritos, no apologies. Handcrafted shaved ice made the island way, fine as snow and poured with real fruit.
Resort-kitchen standards. Counter-service pace and price.
Sourcing is the whole job.
Campbell is a longtime advocate for sustainability in the food system and a co-founder of Portland's Sustainable Seafood Summit. That isn't a marketing line, it's how The Shore runs.
Fish is verified at the source, cut in house and dressed to order. Nothing sits. Nothing gets batched in advance and held.
"Freshness isn't a claim, it's a discipline," Campbell says. "It shows up in what you're willing to turn away, how often you cut, and how fast it moves. That's where the flavor lives."

A lifelong surfer, Campbell credits the ocean with shaping his cooking long before sustainability became industry shorthand. The Shore is built for the way people actually live out here. Food meant to be eaten after surfing, after driving, after living.
